Pig roast 2

With Troy in charge we started the pig roast at 6:00 Saturday morning. First thing to do is get the coals started. 20 pounds to start then you divide it up into 4 piles in each corner. Next , you get the guest of honor.
Here he comes strait from the bathtub where he had been marinating since Friday.
All dressed up and ready to go. We had to do the sunglasses.


All bolted together and on top of the pit.

Next you cover the pig with aluminum foil to hold the heat in. Its about 7:15 at this point.




Every hour or so you add a few coals to the corners to keep the heat going. Troy would lite the charcoal in a shovel and then put it in the corner that needed it the most.






10:30 and Barry said its time to flip. Remove the foil and flip it over. Cover the pig again and drink more beer.



Around 2:00 the pig is done. Take a sample to make sure and Hell ya.






Dig in boys. Now all you have to do is get the meat off the bone and a taste sample every now and then.











Not much left. The meat was very tender and easy to remove.





So after all was fed we played some horse shoes, volleyball and what ever.







Got to hand it to Troy this thing went about as smooth as any event I've ever seen. Going to do it again next year and I'll let you know when.
